How do the 3 Abhidharmas we have today differ from one another?

The best overview of the Vaibhasika is KL Dhammajoti's Sarvastivada Abhidharma

Regarding Theravada Abhidhamma there are many resources, including full translations of the Abhidhamma Pitaka source texts. Karunadasa, Y (2010). The Theravada Abhidhamma is a good overview

There is little on the Sariputrabhidharma

Frauwallner summarizes the Sariputra Abhidharma collection of the Dharmaguptakas in _Studies in Abhidharma Literature and the Origins of Buddhist Philosophical Systems_, which is probably a good book for your overall goal of comparing the three traditions. It's a good introduction to the whole genre.
