Yes, the problem is the 'am.'
The 'am' for Descartes implies that thought is grounded in enduring substance: the formal basis for an independent ego.
So a Buddhist reinterpretation would be simply:
I think, therefore I think.
(thinking happens, but without being grounded in enduring substance).
